Pumpkin Ki Sabzi

Pampkin Ki Sabzi is a light and simple recipe where pumpkin pieces are cooked thoroughly in a variety of masalas. They are cooked on slow fire, often simmered for hours till they turn creamy and then flavoured with spices. Pampkin Ki Sabzi is simply delicious, tangy, spicy and sweet at the same time.

  • 750 gm pumpkin
  • ¼ cup oil
  • 1 tbsp sliced ginger
  • A pinch asafoetida
  • 1tsp fenugreek seeds
  • Salt to taste
  • ½ tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tbsp coriander powder
  • 1tsp garam masala
  • 1 tbsp amchoor powder
  • 4-5 green chillies, slit

  • Cut the pumpkin into 2-3 cm pieces.
  • Heat oil, add asafoetida, fenugreek seeds and cumin seeds.
  • When the seeds begin to splutter add ginger.
  • Sauté till lightly coloured, add pumpkin and green chillies, stir-fry over high heat untile they look glossy.
  • Add salt, turmeric, garam masala, coriander powder, chilli powder and sugar and mix well.
  • Lower the flame and let simmer covered, until cooked through, stirring 3-4 times.
  • Add amchoor, cook further for 2-3 minutes.
  • Garnish it with coriander leaves.
