Papad Ki Sabzi is a traditional Rajasthan recipe which has a flavor that is distinct and fabulous. This recipe is an attempt to present papad in a new way. Enjoy this tempting sabzi with roti or parathas.

Ingredients:


  • 5 papad
  • ½ cup curd
  • ¼ tbsp. mustard seed
  • 3 tbsp oil
  • 1 onion
  • 2 tomatoes
  • 1 inch piece ginger
  • ¼ tbsp. turmeric powder
  • ¼ tbsp. red chilli powder
  • 1 green chilli
  • ¼ tbsp. coriander powder
  • ¼ tbsp. garam masala
  • 1 tbsp coriander leaves
  • Salt to taste

Preparation:
  • Roast the papads. You can fry the papad in oil.
  • Heat oil in a pan and add mustard seeds. Allow them to crackle.
  • Add thinly sliced onions and cook till they are translucent.
  • Now add turmeric powder, red chilli powder, garam masala, coriander powder and salt.
  • Mix all the spices and cook for a minute. Now add tomato, ginger and green chilli paste and sauté the masala until oil start separating from it.
  • Cool the pan completely and on a low flame add the well beaten curd.
  • Keep stirring continuously on a low flame. Also add ½ cup water, cover and allow it to simmer.
  • When you see small bubbles in your gravy, break the papad in small chunks and add them to the gravy.
  • Now add some chopped coriander leaves and cook for 2 minutes.
  • Papad ki sabzi is now ready to serve with roti or parathas.
