Mixed Vegetables From Imperial Inn

Mix vegetable is a simple but delicious recipe and filled with flavours. This recipe is a good way to incorporate a variety of vegetables in a meal. In this recipe, vegetables are not fried. The vegetables are cooked in their Juices. It does not take much time to cook but tastes good with Chapati or poories and also with steamed Rice.

Ingredients:
  • 2 cups of mix chopped veggies (cauliflower, carrots, potatoes, French beans, capsicum, peas).
  • 1 finely chopped onion
  • 2 finely chopped tomatoes
  • 1 finely chopped green chilli
  •  1 tsp garlic-ginger paste
  • 2 tsp coriander powder
  • ½ tsp turmeric powder
  • ¼ tsp chilli powder
  • ½ tsp garam masala
  • 1 tsp cumin seeds
  • 8-10 paneer cubes
  • 2 cups water
  • 2 tbsp cream
  • 2 tbsp oil
  • Chopped coriander leaves
  • Salt to taste

Preparation:
  • Heat oil in a kadhai or thick bottomed pan.
  • Add cumin seeds. Once they splutter add the chopped onion.
  • Fry the onion till they become transparent.
  • Add the ginger-garlic paste. Fry for a minute or till the raw smell disappears.
  • Add tomatoes. Keep on stirring till the tomatoes become soft and pulpy. When the mixture becomes smooth and one, then add all the spice powders one by one mentioned in ingredients.
  • The process of frying tomatoes takes a little longer. Fry tomatoes on a low flame.
  • Add the green chilli. Mix in the chopped vegetables, salt and water.
  • Cover and let the veggie cook.
  • Once the vegetables are semi cooked add the cream. Give a stir.
  • Cover again and simmer the veggies till they are done.
  • Add more water if the water dries up and if the veggies are still to be cooked.
  • Once the veggies cooked, add the paneer and simmer without the lid for 2 minutes.
  • Garnish with chopped coriander leaves.
  • Now Mix Vegetables is ready to serve with poories, parathas, kulcha or chapaties.
