Cauliflower In Schezuan Sauce from Imperial Inn

A tasty way to serve cauliflower for a snack. Even those who do not like this vegetable are sure to enjoy this crunchy and spicy tit bit.

Cauliflower In Schezuan Sauce

Ingredients:
  • 500 gm cauliflower florets
  • Salt to taste
  • Oil for deep-frying
To be mixed into a thick batter
  • 4 tbsp plain flour (maida)
  • 2 tbsp cornflour
  • ½ tbsp oil
  • A little water

Other ingredients
  • ½ tsp chopped garlic
  • ½ tsp finely chopped ginger
  • ½ tsp finely chopped green chillies
  • 1 tsp chopped spring onions
  • 3 to 4 tbsp schezuan sauce
  • 1 tbsp oil
Cauliflower In Schezuan Sauce
Preparation:
  • Dip the cauliflower florets into the batter and deep fry over a high flame until crisp.
  • Heat oil in a wok or frying pan on a high flame. Add the garlic, ginger and green chillies and stir fry over a high flame for a few seconds.
  • Add the spring onions and fry again on a high flame for a few seconds.
  • Add the schezuan sauce and fried cauliflower florets and toss well. Add a little water, if the sauce is thick.
  • Serve hot.
